Fall is Here

When fall rolls around does anyone else start craving warm comfort food? Fall is the time I start craving rich carbs (my waistline doesn’t love this) and warming soups. This picture of the fall leaves has got me in the mood for some of these goodies.

Some people may think that vegetarian food does not have many comfort food recipes, but I beg to differ. Just think about it…pairing gooey cheese with some sort of pasta is the ultimate comfort food (I am getting hungry just thinking about it).

To make life easier, there are also plenty of quick cooking vegetarian recipes because, at least for me, time seems to be flying by fast once fall arrives and before I know it, Christmas is here.

Since I am feeling crunched for time this week, I have been relying on some of my favorite fall recipes that I have found online.

Let’s start with the gooey cheesy one first. Budget Bytes has a really yummy broccoli shells and cheese recipe. I make this recipe even faster by making sure to buy all my cheese shredded and ready to go. You can also speed this up by using frozen diced onions or omitting them altogether. If you want to keep this purely vegetarian make sure to buy parmesan without rennet.

Another food I crave in the fall is soup. This recipe is a lot more waist friendly. I use Genius Kitchen’s vegetable soup recipe as a base for my own creation. I speed this recipe up even more by using a bag of frozen mixed vegetables that are already to go. To keep this vegetarian be sure to use vegetable broth and omit the Worcestershire.

  1. I've been experimenting with crock-pot soups recently and they've been delicious. They're also really effective if you're a transitioning vegetarian or vegan because they're really easy to make vegi people friendly. And because it's in a crock pot you can leave it over night and wake up in the morning that smells amazing! You should try some crock pot tomato soup! Its really easy to make and you can add as many veggies as you want, the last one I made had peppers, carrots, squash, and just a little bit of mushrooms. I was addicted to say the least.

    1. Crock pot recipes sound like a great idea! While they may not be quick cooking they save you a ton of time in the long run. I will definitely try some soup recipes that way. Thanks.

  2. You had me at soups. Fall is honestly the best time of year (in my opinion) and I absolutely love the squash and other hardy produce in season to use in fresh soups. I recently had a red curry butternut squash soup, and that is honestly my new favorite fall food! It has all the warmth of the curry and the smoothness of the butternut squash. I'd love to see more posts about your personal journey with being a vegetarian, and how you can adapt recipes to fit your dietary needs.
