Spicy Saturday

I have a confession to make. I love spicy foods. I can’t get enough of that extra kick that comes along with spiced up foods.

That is why I am dedicating Saturdays to my spicy food addictions. So not only will the recipes take no time to make but they will also have a nice peppery kick.

The first recipe I am going to share is a spiced up black bean quesadilla. I use a jarred hot salsa for a fast way to add heat and already prepared vegetables. If you are not a fan of spice than just use mild.

There are so many ways you can make a quesadilla and they cook in no time at all. Hurry The Food Up has a list 18 different quesadillas that are both quick and vegetarian.

If you are not a fan of quesadillas the vegetarian blog, the first mess, has a tasty black bean and rice dish that rocks my world.

Spicy Black Bean Quesadillas
Makes 4 quesadillas
Total time – About 20 minutes

Ingredients
    
  • 8 tortillas (8 inch)
     1 cup of hot salsa
       15 ounce can of black beans
     2 cups shredded cheese


Directions
    
  1. Drain the can of beans and rinse them.
  2. Add the rinsed black beans and salsa to a medium pan and place over medium heat until heated through (a low simmer).
  3. Once the black bean mixture is cooked, set aside.
  4. Place 1/4 of the black bean mixture and a 1/4 of the cheese on a tortilla and top with another tortilla. 
  5. Warm a non-stick skillet over medium heat and place your prepared quesadilla on it.
  6. Once the bottom side of the quesadilla is lightly browned (about 2 minutes) flip it over using a large spatula and brown the other side.
  7. Once both sides are browned take it off the skillet and cut it into wedges of 4 or 6, whatever your heart desires.
  8. Repeat this 3 more times so you have a total of 4 quesadillas. Serve with sour cream, shredded lettuce and more salsa if that floats your boat.

  1. Uhm, can I just say YUM!! I also love spicy foods, I once carried Sriracha around with me everywhere and told people it was "just in case". Black beans are such a good combination with spicy foods, and I think they really balance each other out well. I'm super excited to see what other spicy (and vegetarian!) dishes you can come up with. On a related note, have you ever tried MorningStar's Spicy Black Bean burgers? They're super convenient to throw on a bun and go, or to even crumble and add to a burrito. Definitely worth trying!

    1. Hi Katelyn. Yes I love MorningStar's Spicy black bean burgers! Those are my favorite veggie burgers and the ones I use the most. My husband is a big Sriracha fan too, I like it but he is in love with it. I am glad you are excited about Spicy Saturday.

  2. This looks so beautiful and yummy. I have heard about quesadillas but I have never had it before. Normally, is it made with chicken and cheese? Your recipe is very interesting because you use black beans as the main ingredient. But I think it will go well with cheese and hot salsa. I like spicy food so I think if hot salsa is added, it will increase the taste of the quesadilla. I will definitely try to make one sometime. Thank you for your recipe!

    1. Hi Tram. Quesadillas are so nice because they are so versatile. You could easily do a chicken and cheese version or any combination really. I am glad you are thinking about trying to make one. Let me know how it goes. Thanks.

  3. I actually tried something similar to this the other day and it was delicious! I used similar ingredients to make a tostada in the oven I didnt even think about trying a quesadilla! Recently ive been using this substitute meat brand called Gardin, theyre really good for stuff like this you should check them out sometime!

    1. I really like the Gardin brand. One of my favorites from them are the beefless tips. I use them in a few different dishes. They are great for fajitas. The tostada you made sounds yummy. I will have to try that out. Thanks.
