Spicy Saturday

I have a confession to make. I love spicy foods. I can’t get enough of that extra kick that comes along with spiced up foods.

That is why I am dedicating Saturdays to my spicy food addictions. So not only will the recipes take no time to make but they will also have a nice peppery kick.

The first recipe I am going to share is a spiced up black bean quesadilla. I use a jarred hot salsa for a fast way to add heat and already prepared vegetables. If you are not a fan of spice than just use mild.

There are so many ways you can make a quesadilla and they cook in no time at all. Hurry The Food Up has a list 18 different quesadillas that are both quick and vegetarian.

If you are not a fan of quesadillas the vegetarian blog, the first mess, has a tasty black bean and rice dish that rocks my world.

Spicy Black Bean Quesadillas
Makes 4 quesadillas
Total time – About 20 minutes

Ingredients
    
  • 8 tortillas (8 inch)
     1 cup of hot salsa
       15 ounce can of black beans
     2 cups shredded cheese


Directions
    
  1. Drain the can of beans and rinse them.
  2. Add the rinsed black beans and salsa to a medium pan and place over medium heat until heated through (a low simmer).
  3. Once the black bean mixture is cooked, set aside.
  4. Place 1/4 of the black bean mixture and a 1/4 of the cheese on a tortilla and top with another tortilla. 
  5. Warm a non-stick skillet over medium heat and place your prepared quesadilla on it.
  6. Once the bottom side of the quesadilla is lightly browned (about 2 minutes) flip it over using a large spatula and brown the other side.
  7. Once both sides are browned take it off the skillet and cut it into wedges of 4 or 6, whatever your heart desires.
  8. Repeat this 3 more times so you have a total of 4 quesadillas. Serve with sour cream, shredded lettuce and more salsa if that floats your boat.

Fall is Here

When fall rolls around does anyone else start craving warm comfort food? Fall is the time I start craving rich carbs (my waistline doesn’t love this) and warming soups. This picture of the fall leaves has got me in the mood for some of these goodies.

Some people may think that vegetarian food does not have many comfort food recipes, but I beg to differ. Just think about it…pairing gooey cheese with some sort of pasta is the ultimate comfort food (I am getting hungry just thinking about it).

To make life easier, there are also plenty of quick cooking vegetarian recipes because, at least for me, time seems to be flying by fast once fall arrives and before I know it, Christmas is here.

Since I am feeling crunched for time this week, I have been relying on some of my favorite fall recipes that I have found online.

Let’s start with the gooey cheesy one first. Budget Bytes has a really yummy broccoli shells and cheese recipe. I make this recipe even faster by making sure to buy all my cheese shredded and ready to go. You can also speed this up by using frozen diced onions or omitting them altogether. If you want to keep this purely vegetarian make sure to buy parmesan without rennet.

Another food I crave in the fall is soup. This recipe is a lot more waist friendly. I use Genius Kitchen’s vegetable soup recipe as a base for my own creation. I speed this recipe up even more by using a bag of frozen mixed vegetables that are already to go. To keep this vegetarian be sure to use vegetable broth and omit the Worcestershire.
