I have a confession to make. I love spicy foods. I can’t
get enough of that extra kick that comes along with spiced up foods.
That is why I am dedicating Saturdays to my spicy food
addictions. So not only will the recipes take no time to make but they will
also have a nice peppery kick.

There are so many ways you can make a quesadilla and
they cook in no time at all. Hurry The Food Up has a list 18 different quesadillas that are both quick and vegetarian.
If you are not a fan of quesadillas the vegetarian
blog, the first mess, has a tasty black bean and rice dish that rocks my world.
Spicy
Black Bean Quesadillas
Makes 4 quesadillas
Total time – About 20 minutes
Ingredients
• 8 tortillas (8
inch)
• 1 cup of hot salsa
• 15 ounce can of black beans
• 2 cups shredded
cheese
Directions
- Drain the can of beans and rinse them.
- Add the rinsed black beans and salsa to a medium pan and place over medium heat until heated through (a low simmer).
- Once the black bean mixture is cooked, set aside.
- Place 1/4 of the black bean mixture and a 1/4 of the cheese on a tortilla and top with another tortilla.
- Warm a non-stick skillet over medium heat and place your prepared quesadilla on it.
- Once the bottom side of the quesadilla is lightly browned (about 2 minutes) flip it over using a large spatula and brown the other side.
- Once both sides are browned take it off the skillet and cut it into wedges of 4 or 6, whatever your heart desires.
- Repeat this 3 more times so you have a total of 4 quesadillas. Serve with sour cream, shredded lettuce and more salsa if that floats your boat.
